Cooking Triumph // Baked Oatmeal
When I saw baked oatmeal on Simply Breakfast, I immediately began acquiring the ingredients because it looked super delicious. She used a recipe found in Super Natural Every Day, but I searched around online to find a recipe, since I didn't have that recipe available. I think the only thing I would change from the recipe I adapted would be to add a lot more raspberries, my favorite bites were the ones that had raspberries in it! I don't know how many of you have ever tried baked oatmeal, but I am a big fan! This recipe is pretty big, so if you want to do a recipe for 1 or 2 people I'd cut the amounts at least in half.
You'll need:
3 cups rolled oats
1 cup brown sugar
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon salt
1 cup milk
2 eggs
1/2 cup melted butter
2 teaspoons vanilla extract
3/4 cup raspberries, or whatever fruit you'd like to add- blueberries, strawberries, etc. (I would put more fruit in than the recipe called for. Mine didn't have as much fruit as the one I saw on Simply Breakfast. I would love to do it again with tons of raspberries and add rhubarb, yum!!)
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt. Beat in milk, eggs, melted butter, and vanilla extract. Stir in dried cranberries. Spread into a 9x13 inch baking dish.
Bake in preheated oven for 40 minutes.
